Paleo Pie Crust

This recipe has taken a bit to perfect…. more trial and errors than I’d like to admit but it is finally here! This is the PERFECT Paleo pie crust. No, I’m not partial… this is the best recreation of my mother’s Never Fail Pie Crust using strictly Paleo friendly ingredients. It’s light, flaky and crispy. Perfect with my soon to be posted Pumpkin Pie. Makes 1 pie crust

1 cup almond flour

1 Tbsp coconut flour

1/4 cup arrowroot starch

1 tsp baking powder

1/2 tsp sea salt

5 Tbsp palm shortening (or butter), cold

1/4 cup cold water

1 tsp vinegar


In a mixing bowl, combine dry ingredients. Cut in shortening or butter until a coarse crumble forms. Slowly add in cold water. Just add in enough to make a dough ball form. Add more water or flour if necessary. While dough is still cold, roll out on a floured surface or a piece of parchment paper. Bake according to pie instructions.
