Paleo Dutch Apple Pie

For Thanksgiving this year, I made this tasty pie. It turned out much better than I imagined. I always tend to doubt myself when it comes to my favorite traditional foods – such as apple pie. Our traditional (gluten filled) apple pie was so delicious; sweet and spicy apples with a buttery, flaky crust. This recipe is exactly that – only paleo, gluten free, vegan, and low sugar. I used fresh-picked, quality apples also. This makes 1 pie

1 recipe Paleo Pie Crust
3 cups thinly sliced apples
1 Tbsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp sea salt
1/3 cup coconut flour
1/2 cup finely chopped walnuts
1/4 cup palm shortening
1 tsp cinnamon
1 tsp vanilla extract
1 Tbsp raw honey
Roll out dough to fit in a 9″ pie plate. In a large bowl, combine apples, cinnamon, nutmeg, cloves and sea salt. Mix until apples are coated with spices. Pour apples into prepared pie crust. In a small bowl, combine flour, walnuts, shortening, cinnamon, vanilla and honey until mixture is crumbly. Sprinkle crumbles over apples. Bake at 350F for about 35-45 minutes or until apples are cooked and crust is slightly brown. If necessary, cover pie with foil to prevent the crust from burning.
