Cauliflower Rice is such a versatile side dish. Our favorite ways to use it are in Asian or Mexican meals… like this Beef Broccoli recipe. It features traditional Asian flavors, but without the grains, gluten or soy. We’ve also made this using chopped bison steak with great results. Don’t skip the green onions! Makes about 4 servings
6 oz beef flank steak, cut into strips
1 Tbsp coconut oil
2 cups broccoli florets, cooked
1/2 cup onions, sliced
1 garlic clove, minced
1/2 tsp sea salt
1/4 tsp black pepper
1/4 tsp red pepper flakes
1/4 cup coconut aminos (or soy sauce)
1 tsp cilantro
1/4 cup green onions, finely chopped
1/8 tsp sesame seeds, optional
2 cups cauliflower rice, cooked
- In a large skillet, heat coconut oil. Add in steak strips and cook over medium heat for about 15 minutes, flipping halfway through.
- Add in broccoli florets, onion, garlic, salt, pepper, red pepper flakes and coconut aminos. Cook for an additional 8-10 minutes or until vegetables are soft and beef is cooked through.
- Place about 1/2 cup cauliflower rice on a serving dish and top with a portion of the beef and broccoli mixture.
- Sprinkle with some cilantro, sesame seeds and green onions.
