Ok, the name may be confusing for these. They are like peanut butter cups, yet like a peanut butter pie topped with chocolate. Either way, they are delicious and you should try them! These are raw, vegan, Paleo, gluten-free, soy-free, etc. Basically, it is a few simple ingredients that makes a beautifully tasty treat. These are very rich so you don’t need to eat very many to satisfy that sweet tooth! Makes about 12 large servings
1 cup almonds
1 cup pitted dates
1 cup cashew butter (or peanut butter)
2 Tbsp cocoa powder
1 Tbsp coconut oil, melted
1/2 tsp honey
In a food processor, pulse almonds and dates until smooth. Spoon date mixture into the bottom of a cupcake pan and press down. Gently spread cashew or peanut butter over crust. In a small bowl, whisk together coconut oil, honey and cocoa powder. Pour over nut butter and refrigerate cup cakes for about an hour or until chocolate is set.
