To be honest with you, getting veggies in at breakfast time is a tricky feat. One of our favorite ways is to serve up a flavorful hash mixture. Typically, the base is potatoes but for this recipe I wanted to ditch the potatoes and use some tasty veggies. Makes 4 servings
2 cups green beans, trimmed and cut into about 2″ pieces
1 large zucchini, diced
1 large yellow squash, diced
1/2 cup onion, diced
1 tsp cajun seasonings (Flavor God has a great blend)
2 Tbsp olive oil or coconut oil
- In a large skillet, heat olive oil.
- Add in green beans, zucchini, squash, onion and seasonings. Stir until combined.
- Saute over medium heat for about 15 minutes, stirring occasionally.
*Serve with some homemade Paleo Biscuits & Gravy!*
