Nested Eggs

I really love a one dish meal – for any type of food, breakfast, lunch, dinner, dessert. It really saves time on prep work and especially clean up! Who loves washing dishes?? Not me! This delicious breakfast (or dinner!) recipe is cooked in a cast iron skillet which gives it a really nice crisp “nest” and is easy to go from stovetop to oven in the same pan. Serve it along side your favorite fruit for a hearty, complete breakfast. This makes 2 large servings

2 small-medium potatoes, peeled and shredded
3 oz sausage, crumbled
2 cups spinach, chopped
2 Tbsp coconut oil
3 large eggs
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp ground sage

Preheat oven to 375F. In a cast iron skillet, melt coconut oil. Add in sausage and cook over medium heat until cooked through. Remove from skillet and place on a serving dish (preferably one you will be using to eat this off of! Hint: less dishes). Add potatoes to skillet and saute for about 10 minutes or until they start to soften. Make sure the potatoes cover the bottom of the skillet – this is your nest. Top with cooked sausage and spinach. Sprinkle with salt, pepper and sage. Crack eggs over top of mixture and sprinkle with additional pepper if desired. Place in oven and bake for about 20 minutes or until eggs are cooked through.
