Moroccan Chicken & Rice

I’m always looking to try recipes from different cultures and this one is a HUGE favorite. We love the spice combinations. I love that it cooks so well in the slow cooker! This really is a simple and flavorful favorite… In all seriousness, it is one of my very favorite meals of all time! Makes about 6 servings

  • 6-8 boneless chicken thighs
  • 1 Tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup golden raisins
  • 1/2 cup green olives, chopped
  • 1 lemon, sliced into strips
  • 1 Tbsp fresh cilantro, minced
  • 1 tsp ground turmeric
  • 1 tsp ground paprika
  • 1/2 tsp ground chili powder
  • 1/2 tsp ground cinnamon
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 cup chicken broth (or water)
  • 2 cups cooked rice
  1. In a slow cooker, add oil and onions.
  2. Place chicken thighs on top of onions and sprinkle with salt pepper, turmeric, paprika, cinnamon, cilantro, chili powder.
  3. Top with garlic, raisins, olives and lemon.
  4. Pour over chicken broth (or water).
  5. Cook on high for 4 hours.
  6. Serve over cooked rice
