I live in America… and in America, we eat pie; we eat apple pie! I’m not sure why Apple Pie is one of this country’s trademarks, but I’m glad it is! Plus it is getting close to the fall, apple season; now you will be prepared with this recipe! This version is unique. It is modified to be, gluten free, low sugar, dairy free and potentially Paleo. Top it with your favorite ice cream – we love this homemade recipe! Makes 1 9″ pie.
1 GF (or Paleo) pie crust – I cheated and used store bought (don’t tell my mom!)
5 large apples, peeled, cored and sliced (I used 3 Red Delicious, 3 Golden and 2 Granny Smith)
Zest of 1 orange
1 tsp orange juice
1 Tbsp arrowroot starch
1 tsp ground cinnamon
1/2 tsp ground allspice
1/4 tsp ground cloves
Topping
1/2 cup chopped walnuts
1 Tbsp almond flour
1 tsp coconut flour
2 tsp coconut sugar
1 tsp cinnamon
1 Tbsp coconut oil
1 tsp orange juice (from orange above)
- Preheat oven to 350F. In a large mixing bowl, combine apples, orange zest and juice, starch, cinnamon, allspice and cloves. Stir until apples are coated. Pour apple mixture into pie crust.
- In a small bowl, combine topping ingredients. Blend with a fork until mixture is crumbly – adding more flour to get mixture to crumble if necessary. Sprinkle crumb mixture over top of apples.
- Bake for about an hour – covering with foil the last 15 minutes to prevent browning. Top with a dollop of ice cream and serve warm!
