Micro Green Burger

Farmer’s markets are my favorite place to go on the weekends! It’s kind of funny that I’ve traded mall shopping and chain restaurants for farmer’s market, whole food stores and kombucha. I’m so thankful my lifestyle has changed and we are on a better path to health! Recently at a local farmer’s market, I found a variety of micro greens and other greens available. I’ve always loved sprouts and greens as they are so versatile and can be used in so many ways. This farm had Arugula Cilantro micro greens and boy are they good! We opted to top our grass-fed bison burgers with some goat cheese and avocado and it was DELISH! This makes 4 servings

1 lb ground bison, beef, venison, turkey or chicken
1 tsp garlic powder
1 tsp black pepper
1/2 tsp chili powder
1 cup micro greens (We used Arugula Cilantro)
1 avocado, thinly sliced
2 roma tomatoes, thinly sliced
4 slices of goat cheese (dairy free alternative if necessary)
4 large pieces of romaine lettuce (or bun)
In a mixing bowl, combine ground meat, garlic powder, pepper and chili powder. Form into 4 burger patties. Grill or cook as desired until cooked through. Place burgers on a bed of lettuce, top with goat cheese, greens, avocado and tomato. Serve with some crispy roasted potatoes if desired.
