Mediterranean Lettuce Wraps

I’ve said this before but I love, Love, LOVE lettuce wraps. They are so easy and versatile. They are my go-to lunch option. These are simple and tasty. Save some time and use leftover chicken from a previous meal. This is perfect to make the evening before if you are short on time (or extra sleepy) in the mornings. 3 large lettuce leaves (I use Romaine or Kale)

1/2 cup shredded, finely chopped chicken

3 tsp hummus

3 baby carrots, finely shredded

1 Tbsp finely chopped olives (any variety)

1/4 tsp black pepper

1/4 tsp sea salt

1/4 tsp Greek seasonings blend (I like thyme, oregano, basil, marjoram)

1 tsp olive oil

1/2 tsp vinegar (I used tarragon flavor)


  • In a small bowl, combine chicken, carrots, olives, pepper, salt, seasonings, olive oil and vinegar.
  • Spread 1 tsp hummus over each lettuce leaf and top with 1/3 of the chicken mixture. Repeat with all lettuce leaves.
  • Serve immediately or refrigerate for up to 24 hours in a sealed container.
