When I first thought of this dish, I thought “wow! This looks awesome!” Then I tasted it, and well it tasted pretty awesome too. I love having different types of greens with my meals. I really enjoy kale but it can be very tough and takes a while to sauté. I decided that I would very finely chop it so that 1-it cooks faster and 2- it is easier to eat. I wasn’t expecting it to give the dish such a nice look. Plus the venison sausage is loaded with flavor! This makes 4 servings
½ lb sausage (I used a savory venison blend)
2 Tbsp olive or coconut oil
2 large potatoes (diced small)
2 cups kale, turnip or mustard greens (I used a combo), finely chopped (herb mill works great)
¼ cup onions, diced
½ cup mushrooms, diced
1 tsp garlic salt or sea salt
½ tsp ground black pepper
½ tsp garam masala seasoning (Indian spice mix of coriander, cumin, cardamom, cinnamon)

In a large skillet, brown sausage and crumble. Add in diced potatoes, onions, mushrooms and greens and cook in oil for about 10 minutes or until soft.

Meanwhile, sprinkle over spices and stir frequently to ensure consistent browning of ingredients.
