Meal Plan 11/24/14 & Motivation

Good Morning –

Today marks the 4th week of my “so-called” retirement. Every Monday, we have been at the doctor – today will be the dentist! Sheesh…. all we have done is passed around a nasty cold and now my sweet baby girl has PINK eye! Ew… who wants that for Thanksgiving?! It could always be worse, but I’m sure hoping that we can get on the right track soon! My frustration reminds me of the need for giving thanks. It is, after all, the wonderful week of Thanksgiving. Prior to my health issues, I was only interested in the food. Now, that is a huge worry for me but my only interest is being thankful and being with my family.

Today’s motivation is simple and thoughtful – “Give thanks to the Lord for He is good; His love is everlasting.” I hope you enjoy this Thanksgiving week. If you are traveling, stay safe. If you are cooking, stay safe (and sane). If you are working or serving, thank you! And most of all, if you are reading this – thank YOU!

If you check out my meal plan below, you will notice it is fairly light. That is because we typically try to go on a “detox” or “gorge prep” the week of Thanksgiving. Our intention is never to “over eat” but it happens. When you have a few different dinners to go to throughout the day, there’s always someone trying to force turkey, ham or pie in your mouth. I don’t have to worry about it – no one tries to feed me anymore đŸ™‚ However, the rest of the clan tends to get a little overwhelmed. I like to have light, yet nutritious meals before the big meal. Plus, we are usually LOADED with leftovers so I’ve also included a few “leftover” meal options for later in the week.
