Happy Monday friends!
Hope you all enjoyed Father’s Day weekend – ours was spent doing what we do best, cooking! My husband decided to smoke some ribs for himself and our fathers. I made the sides and the desserts, of course. The dessert table: Coconut Cream Pie (a favorite of all the dads in our lives!), Cupcakes – Root Beer Float, Carrot, German Chocolate and Maple Bourbon, and Paleo Coconut Chip Cookies (made with date sugar!). While, I can’t speak for the deliciousness of the cupcakes or pie (although I didn’t hear any complaints!), the cookies were great – low sugar, clean ingredients and chock full of protein and healthy fats! Who knows…. maybe a recipe coming soon… 🙂
Now that summer is officially here, we are enjoying fresh garden veggies, cold sandwiches, salads and of course, ice cream! What’s your favorite go-to summer food??? I’ll be sharing a few new recipes that are great for summer!
