Loaded Taco Salad

We are usually pretty pressed for lunch. I’m trying to get princess down for a nap after eating and husband gets 30 minutes to come home and eat. Salads and sandwiches are usually the go-to meal but that can get pretty boring! This salad is far from boring. It is full of flavor with just a few simple ingredients. My trick is to make versatile foods on the weekends – such as beans, shredded chicken, etc. That way I have easy to grab foods for busy meals during the week. This makes 2 servings

4 cups mixed greens, torn into small pieces
1 cup black beans, cooked
1 cup shredded chicken, cooked
1/2 cup salsa
1/2 cup guacamole (see below)
1/2 cup shredded cheese, if desired
Tortilla Chips, Plantain Chips or taco shells, as desired

On serving plates, place mixed greens. Top with black beans, shredded chicken and cheese. Pour over salsa and scoop on guacamole. Serve with chips

*Easy Guacamole: mash up ripe avocados. Splash with a little lime juice to keep from browning. Add salt and pepper to taste. Store in fridge for a couple days. Best if eaten immediately.
