Lemon Turmeric Veggies

This recipe is very simple. It takes some traditional vegetables and adds a few flavorful spices to brighten up any dinner plate. It’s a great way to get your recommended amount of vegetables without sacrificing flavors. Plus it’s versatile enough to serve with almost any type of dinner entrée. You can even substitute your favorite vegetables if there’s one in the recipe you don’t like (for me, I use less cauliflower!) This makes 4 servings

2 cups broccoli florets
1 cup cauliflower florets
1 cup carrots, diced
1 cup yellow squash, diced
½ cup water
1 Tbsp olive oil
1 tsp vinegar (I used coconut vinegar)
1 tsp ground turmeric
1 tsp lemon zest
1 tsp ground black pepper
½ tsp sea salt

  • In a large bowl, combine vegetables and water. Cover bowl with a slightly damp paper towel and microwave on high for about 6 minutes or until vegetables are soft.
  • You can also steam your vegetables any other way if you don’t like using microwaves (I needed a time saver).
  • Drizzle olive oil and vinegar over cooked vegetables.
  • Sprinkle on spices and stir until vegetables are well coated with seasonings.
