Lemon Rosemary Chicken Bake

I’m sure you won’t complain about this one dish meal. What is great about this dish is that the ingredients can all be mixed in the baking dish! Tasty meal and easy clean-up!! Makes about 6 servings

2 large chicken breasts, cut into chunks
2 potatoes, peeled and diced
2 cups broccoli florets, chopped
1/2 cup onion, sliced
1 tsp fresh rosemary
2 lemons, sliced
1 Tbsp apple cider vinegar
1/2 tsp oregano
1 tsp sea salt
1/2 tsp black pepper
1 Tbsp olive oil

In a large baking dish, combine all ingredients and toss until coated in seasonings. Cover with foil and bake at 350F for about 40-45 minutes or until chicken is cooked and veggies are soft.
