Lemon Ginger Brussel Sprouts

Need another quick and easy side dish for dinner tonight?? Try this super easy brussel sprouts! I know brussel sprouts are not favorites for too many people (myself included) but I think it is important to get a variety of foods into your diet as they all have different nutrients. So every once in a while I break out these smelly little veggies. I have found that if you roast them, they don’t smell nearly as bad! These would go great in a foil pack on the grill also. This makes about 4 servings

3 cups brussel sprouts (or one standard package)
2 Tbsp olive oil
1 lemon, zested and juiced
1 tsp freshly grated ginger (or 1 tsp ground ginger)
2 tsp minced garlic
1 tsp sea salt
½ tsp black pepper
In a large bowl, combine brussel sprouts and olive oil. Stir until sprouts are coated with oil. Sprinkle over seasonings, garlic, ginger, lemon zest and juice and stir again until sprouts are coated. Pour brussel sprouts onto a large baking sheet lined with foil. Bake at 400°F for about 20-25 minutes or until edges start to crisp and sprouts are slightly tender.
