This year has been SO crazy for us – in some ways it’s been good, some ways it’s been bad. Either way, we’ve learned so much. Part of what we learned is to celebrate every little moment, no matter how unimportant it seems.
In case you missed it, we are working on building my official, licensed bakery – with hopes for completion in a few months. In the meantime, I’ve been taking some allergy-friendly orders to help raise funds for the bakery! I’ve had a great response from my local area and can’t wait to expand into other nearby towns. I know this endeavor will take a lot of work but my passion for helping others live a little easier is much greater than any amount of work required. I’m very excited to share that passion with you all!
This holiday season, I’ve been putting together some allergy-friendly baking mixes in cute little jars to help you celebrate with your own family. Part of our holiday tradition is baking LOTS of cookies and drinking warm cocoa while reading books, watching holiday movies and just anxiously awaiting the blessed Christmas day with our loved ones. I’m someone who LOVES to bake from scratch. However, I also understand the desire for saving a bit of time by using a mix. I love these mixes because they are festive and easy. Not only are they gluten-free, but can easily be made using other allergy-friendly ingredients. However, if allergies aren’t an issue for you, they are still delicious!
The three main mixes I made up were Santa Cookies (makes 18) – featuring holiday M&M candies, gluten-free oats with a slightly sweet sugar cookie base; Fudge Brownies (12 servings) – featuring some holiday sprinkles, Enjoy Life chocolate chips and rich coconut sugar; Apple Pie Pancakes (12 servings) – featuring dried apples, bold spices (cinnamon, nutmeg, allspice) and coconut sugar. With each jar you’ll find several servings and you just need a couple common ingredients to make the foods. If trying to find flour blends that are easy to use has been daunting, don’t worry – I’ve taken the guess work out of it! I also put together some Organic Hot Cocoa Ornaments – full of rich, chocolate flavor in a festive ornament; and Mulled Spice Mix – perfect with some red wine or apple juice!
