Jicama Garlic Dip

Jicama is one of my new favorite vegetables. When I first bough one, I had no idea what it was or how I was going to eat it. I was peeling it and decided to just take a bite of it. That’s all it took for me to fall in love with this food! It’s light, crisp and has a very unique yet gentle taste. This makes a great, healthy appetizer and the dip goes with just about anything. Makes about 6 servings

Jicama with garlic parsley dip

1 large jicama, peeled and cut into strips
1/2 tsp minced garlic
1/4 cup mayonnaise
1/3 cup coconut milk cream (Try So Delicious Culinary Coconut Milk)
1 tsp lemon juice
1 tsp sea salt
1 tsp parsley, chopped or dried

In a small bowl, combine garlic, mayo, coconut cream, lemon juice, salt and parsley. Stir until smooth. Refrigerate about 1 hour prior to serving for better flavor. Serve with jicama strips or other vegetables.
