Jalapeno Stuffed Chicken

I’ve posted a couple other stuffed chicken recipes before. They are so simple and pretty quick. Plus there are so many possibilities for the stuffing. I really liked this combination. The jalapenos give a little extra heat but the mozzarella cheese helps offset some of the spice. You could also use maybe a queso type cheese if you’d like. I have found a really good dairy free mozzarella cheese so I’ve been using it for everything. Serve this with some steamed veggies or potatoes for a complete meal. Makes 2 servings

2 chicken breasts, butterfly sliced
2 oz of cheese, cut into thin slices
2 Tbsp jalapeno pepper slices
1 tsp cilantro
½ tsp garlic, minced
¼ tsp chili powder
¼ tsp sea salt
¼ tsp black pepper
Olive oil
Preheat oven to 350°F. In a  greased, large oven safe baking dish, place chicken breasts. Put half of the cheese into the center of each chicken breasts. Top each with jalapenos and cilantro. Close stuffed chicken breasts and secure with toothpick if necessary. Sprinkle tops of chicken with garlic, chili powder, sea salt and pepper. Drizzle with just a little olive oil and bake for about 30-35 minutes or until chicken is cooked through.
