Italian Chicken & Pasta

Finding a Paleo pasta can be tricky – but I have found a company that has great Paleo friendly pasta! It is grain free, gluten free, soy free, etc. I can’t find it local where we live but it is available in larger cities. You can also order it online! Check out Capello’s here! They also make a Paleo cookie dough recipe that I can’t wait to try! Anyway, use your favorite pasta in this dish and I’m sure it will taste great! Spaghetti squash is also a good alternative for regular pasta.

2 large chicken breasts

1 Tbsp balsamic vinegar

1/2 cup mushrooms, sliced

1/4 cup onions, sliced

1/4 cup fresh basil, cut into thin strips

1 Tbsp fresh oregano, chopped

1 Tbsp olive oil

1 cup pasta sauce or tomato sauce

1 tsp sea salt

1/2 tsp black pepper

4 servings, cooked pasta


Cut chicken into thin small chunks. In a large skillet, saute chicken in balsamic vinegar and olive oil. Cook over medium heat for about15 minutes or until chicken is cooked through. Halfway through cooking, turn chicken chunks and add in mushrooms and onions. Sprinkle over oregano, basil, salt and pepper. Once chicken is completely cooked, pour in tomato sauce. Bring mixture to a slow boil. Serve hot chicken mixture over warm pasta.
