We love baked potatoes, especially sweet potatoes. This is just a simple way to add complementary flavors to the sweet potatoes for a quick and easy side dish. Makes 4 servings
4 medium sweet potatoes, baked
2 Tbsp coconut oil
2 tsp honey
2 tsp ground mustard
- Split baked potatoes in half while still hot.
- Place ½ Tbsp of coconut oil in each potato.
- Drizzle ½ tsp honey and sprinkle mustard over potatoes.
- Best if served warm.
