Homemade BBQ Sauce & Chicken Kabobs

This was a challenge for me. It is still not exactly how I wanted but it doesn’t taste bad and it goes well with grilled foods. It is fairly customizable as you can add more spice if you’d like. This sauce is perfect with my grilled (or baked) chicken kebobs (see below). Makes about 1.5 cups of sauce.

¾ cup ketchup
¼ cup honey
3 Tbsp soy sauce
2 Tbsp balsamic vinegar
1 tsp minced garlic
¼ cup apple cider
¼ cup apple juice
½ tsp sea salt
¼ tsp chipotle pepper
¼ tsp chili powder
In a blender, combine ingredients. Blend until smooth. Use as a dipping sauce or pour over grilled foods to enhance flavor.

For some reason, my kid will eat dinner if it comes on a stick. My son doesn’t eat dinner well but he scarfed these down quick (all because they were served on a stick). Either way, grill these up and top with the BBQ sauce from above.

2 large chicken breasts cut in 1” chunks. Marinate the chicken chunks in a some of the BBQ sauce. Cook on grill for about 25 minutes, turning half way through. At the last 5 minutes of cooking, spread some of the BBQ sauce onto the chicken chunks. Remove from grill and top with additional sauce if desired.
