Home on the Range Pie

“oh give me a home where the buffalo roam…” For some reason, when I made this dish, I instantly thought of the Kansas State Song – “Home on the Range”. That’s where this name came from. Otherwise, you will recognize this as similar to a Shepherd’s Pie. But since I’ve been in Kansas my whole life and I substituted buffalo, I felt like it fit. Whatever you call it, this dish is great! It is very hearty, filling and comforting. Plus it is one of those easy, one dish meals that’s great for any occasion. Makes about 6-8 servings

1 lb ground bison
4 large potatoes, baked, peeled and diced
1 cup carrots, diced
1 cup broccoli, chopped
2 cups water
2 Tbsp potato flour (or other flour to make gravy)
1 tsp sea salt
1/2 tsp black pepper
1 tsp sage
1/4 tsp chili powder
1 tsp parsley
1 tsp balsamic vinegar
1 Tbsp all-natural ketchup (or tomato sauce) – optional
1 Tbsp coconut, melted or olive oil
1/2 cup cheese (dairy-free or optional)

In a large skillet, brown bison. Sprinkle bison with flour, salt, pepper, sage, chili powder, parsley, vinegar, ketchup and coconut oil. Stir until combined. Continue cooking over low-medium heat. Slowly add in water about 1/2 cup at a time. Each time water is added to meat, stir until mixture thickens. Add in more water as desired to get gravy consistency. Meanwhile, steam or cook carrots and broccoli together. This is easily done in the microwave by putting vegetables in a glass bowl and covering with a damp paper towel. Microwave on high for about 6 minutes. In a greased 3 qt baking dish, place bison and gravy mixture. Top with carrots, broccoli and diced potatoes. Sprinkle over cheese if desired. Bake at 400F for about 15-20 minutes.
