Holiday Fruit Pie

My mom is an excellent pie maker – like the best I’ve ever known. Therefore, I have a history of delicious pie tasting in my background. With that being said, this pie is amazing! It is a very fruity pie that is low in added sugar but is not too tart. The combination of fruits is great for the holidays. However, this pie would be great any time of year. Did I mention it is also Paleo??? You betcha! No grains, gluten, dairy, etc. Makes one deep dish pie

Holiday Fruit Pie

1 recipe for pie crust (see mine here!)
2 cups cranberries
1/2 cup water
1/4 cup raw honey
1 apple, peeled and thinly sliced
1 cup pineapple, diced
1 tsp cinnamon
1/4 cup arrowroot starch
 

In a small saucepan, heat cranberries, water and honey until boil. Simmer for about 10 minutes or until cranberries have all popped. In a large mixing bowl, combine cranberry mixture, apple, pineapple, cinnamon and arrowroot starch. Pour mixture into prepared pie crust. Top with another pie crust, lattice crusts, or even a crumble if desired. Bake at 350F for about 40-50 minutes or until crust is starting to brown and fruit is cooked. Top with foil half way through baking if your crust is browning too quickly. Let pie cool for about 15 minutes before slicing.
