Healthy Lunch Options

Are you in a lunch rut?? Tired of eating out? Tired of the same boring lunch? It doesn’t have to be this way!!! I’m here to give you some easy, healthy lunch options that will keep you full, keep you going and won’t wreck your new year’s diet! Check them out!!

First, I wanted to share with you a new recipe (if you can call it that). This is SO simple and basically features everything you want in a sandwich, just without the bread! We make these often and mix up the ingredients for variety. This is my son’s #1 request for his school lunch – yes, even more often than PB&J! Customize with whatever you like! Makes 1 adult serving

4 slices deli turkey
1 slice cheese, divided into 4 smaller slices
1 tomato, thinly sliced
1 avocado, thinly sliced
1 tsp mayo
1 tsp mustard

  • Place turkey slices on a cutting board. Spread mayo and mustard over turkey. On one end of the turkey slices, place cheese, tomato slices and avocado slices. Roll turkey up and serve! You could secure rolls with a toothpick but it’s not necessary. These will keep in the fridge a couple days.

*Other options: use ham, beef, or even sliced deli chicken in place of the turkey. For vegetables, you can use bean or vegggie sprouts, lettuce, spinach or kale, pickles, etc. Basically, whatever you like in your sandwich, put in these rolls!

Cherry Chicken Kale Wraps – a tasty chicken salad blend served in kale lettuce wraps (paleo, gluten free, grain free)
Chicken Salad Cucumber Bites – just yum! (paleo, gluten free, dairy free)
Fennel Sprout Topped Sweet Potatoes – makes a great side dish also! (Paleo, gluten free, dairy free)
Avocado Shrimp Salad – put it on a lettuce wrap or serve with crackers! (gluten free, grain free)
Easy Chicken Taco Salad & Plantain Chips – so light and tasty! (Paleo, gluten free)
Mediterranean Lettuce Wraps – a flavorful blend! (Gluten free, Grain free)
Salmon Cabbage Salad – hearty and can use leftovers! (Paleo, gluten free)
Honey Mustard Peach Chicken Salad – a great summer salad! (Gluten free, Grain free)
Serve these up with some fresh veggies and fruits for a great meal!
If you don’t like any of these recipes – there’s always the leftovers option!!

    Thank you for sharing great recipes. I found a great book with a step by step guide and recipes on Amazon. The Recipe and Diet book by Jesse Morgan. Recipe are really easy to make and they are pretty healthy. This is the book site:
