Grilled Pizza

In honor of my sweet little boy’s 6th birthday, I decided to provide you with one of his favorite recipes! PIZZA! If he’s not requesting mac & cheese, then he’s asking for pizza. After making this, I can’t say I blame him. It’s our new favorite!!

Okay, this recipe blew my mind. Call me lazy (or really smart) but it’s 90F out and I DO NOT want to turn on the oven. We cook on the grill practically every night but this night my son wanted pizza. It was “Kid’s Choice Night” so I decided I’d throw some pizza on the grill. Results: I may NEVER cook pizza in the oven again! Okay, that’s silly.. I’ll only do it in the winter when I can’t grill it! This is a very simple pizza recipe but add whatever toppings you’d like.

1 recipe pizza crust (Use your favorite recipe or your favorite mix. I love Bob’s Red Mill).
olive oil
1 tsp dried basil leaves
1/2 tsp dried oregano
1/2 tsp sea salt
1 tomato, thinly sliced
Shredded cheese (we used dairy free)

  • Make pizza crust according to recipe or package instructions. Pre-grill the pizza crust by placing dough onto a greased sheet of foil. Carefully place crust on foil onto the grill at about 450F.
  • Close grill lid and prepare toppings. Pre-grill the crust for about 7-8 minutes. Remove from grill and brush on olive oil.
  • Sprinkle with seasonings and top with tomato slices and cheese (and other toppings as desired). Return to grill and cook for about 10 minutes or until edges of crust are brown and cheese is melted.2014-06-22 17.09.53
