Grilled Chicken Over Tomatillo Pepper Squash

This dish is very simple and tasty. It goes perfect with grilled chicken but would also taste great with another main dish. The tomatillos provide a tangy flavor with the bold flavors of the bell pepper. This makes about 4-6 servings

2 large chicken breasts, grilled (See recipe here)

1 spaghetti squash, cooked

4 large tomatillos, husks removed and diced

1 large bell pepper, diced

1/2 tsp ground ginger

1 tsp cilantro

1/2 tsp sea salt

1/2 tsp black pepper

1 Tbsp olive oil

 

  • In a large skillet, saute tomatillos and pepper in olive oil. Sprinkle with ginger, cilantro, salt and pepper.
  • Cook over med-high heat for about 15 minutes or until vegetables are soft. Add in spaghetti squash and cook for another 5 minutes.
  • Spoon mixture onto serving dish and top with sliced chicken.
