Grilled Bok Choy

Bok choy is a very versatile vegetable. We enjoy it cold and raw in salads, sauteed in stir-fries or boiled in soups. However, we had never tried it grilled … until recently. We grill foods year round and we love it. This bok choy crisped up nicely and the grill added extra flavor and texture. We served it alongside some grilled chicken. Makes 4 servings

Grilled Bok Choy

2-3 large pieces of bok choy, whole
2 Tbsp olive oil
1 tsp sea salt
1 tsp ground ginger
1/2 tsp black pepper
2 Tbsp coconut aminos or soy sauce
2 green onions, diced

Drizzle bok choy with olive oil, salt, ginger and pepper. Toss until all sides are coated. Grill over medium heat for about 4 minutes on both sides or until just slightly crisp. Place on a serving dish and drizzle with coconut aminos and sprinkle with diced onions.
