Grain-free Vegan Vanilla Bean Donuts

Let’s be honest here…. who doesn’t love a good donut. Sure, I could be talking about a greasy, fatty, gluten filled traditional glazed donut but I’m not. I’m talking about a healthy, baked, vegan, gluten free, grain free and delicious! Don’t feel guilty about having a couple of these with your morning coffee! Makes 6 regular donuts.

1 1/2 cup almond flour
1 Tbsp xanthan gum
1/2 tsp baking soda
1/4 cup coconut oil, melted
1/2 cup almond milk, unsweetened vanilla
2 Tbsp flax seed
6 Tbsp warm water
3 tsp honey
1/2 tsp sea salt
1 tsp vanilla
Glaze (optional)
1 cup powdered sugar (I like this brand)
1 tsp coconut oil, melted
1-2 Tbsp almond milk
1 2″ vanilla bean pod

  • In a mixing bowl, combine donut ingredients. Blend for about 30 seconds or until well combined.
  • Spoon or pipe into a greased donut pan.
  • Bake at 350F for about 20 minutes or until donuts are cooked through and start to brown.
  • Meanwhile, combine glaze ingredients in a small bowl, whisk until smooth.
  • Remove donuts from oven and let cool about 10 minutes. Drizzle with glaze and serve!
