Grain Free Biscuits & Gravy

I have had nothing but trouble trying to create a “Courtney” friendly recipe for breakfast. Right now I can’t have any grains, gluten, dairy, soy, eggs and beans. I’ve tried at least 5 recipes for pancakes – all failures. I’ve had a really hard time finding a good substitute for eggs for certain foods. I stumbled upon this recipe for coconut flour biscuits from And Love It Too. I was pleasantly surprised at how they turned out. Don’t get real excited – they are NOT Grand’s Flaky Biscuits or something of that sort. However, they are fluffy little biscuits with a slightly sweet taste from the coconut. Coconut flour is very difficult to use, especially when you aren’t very familiar with it – like me. It is very dense and absorbent. I like using almond or other nut flours better BUT they are so expensive. I’ve made my own, but it is still pretty expensive in comparison to coconut flour. Anyway – these biscuits would be perfect with some homemade jam as well; but we like the savory country gravy! Use this gravy on biscuits, a breakfast hash, shepherd’s pie, etc. The whole meal is dairy, grain, gluten, soy and egg free! Makes 4 servings

Biscuits (adapted from And Love It Too: Coconut Flour Country Biscuits)

½ cup canned coconut milk
1 Tbsp lemon juice
1 cup coconut flour
1 tsp cream of tartar
1 tsp baking soda
½ tsp xanthan or guar gum (optional)
1 tsp sea salt
½ cup butter, ghee, or shortening cut into chunks (I used Earth Balance DF, Soy Free butter)

Gravy

1 cup ground sausage (I used our homemade Chicken Sausage)
½ tsp ground sage
½ tsp sea salt
½ tsp black pepper
1 Tbsp butter, ghee or oil
1/3 cup potato flour
¾-1 cup almond milk, unsweetened

  • In a small bowl, combine coconut milk and lemon juice for biscuits. In a separate bowl, combine coconut flour, cream of tartar, baking soda, xanthan gum and salt. Using a pastry blender, cut in butter pieces until a course crumble remains.
  • Slowly add in coconut milk mixture until dough forms and is slightly sticky. Place dough on a lightly floured surface and pat into a large 1” circle.
  • Using a biscuit cutter, cut dough into biscuits. Place biscuits on a baking sheet lined with parchment paper. Bake at 450°F for about 15 minutes. Makes 8-10 biscuits.

While biscuits are baking, make gravy. In a large skillet, brown ground sausage and crumble. Add in butter, sage, salt and pepper. Once butter is melted, sprinkle over potato flour and stir to combine with butter and sausage. Slowly add in ¾ cup milk and cook over medium heat for about 10 minutes or until mixture starts to thicken. Add in more milk if necessary. Pour gravy over warm biscuits.
