I was on the hunt for a new pie idea and ran across a recipe for Kentucky Derby Pie in one of my Grandma’s old cookbooks. The original recipe called for lard, corn syrup and other gunk SO I modified it to clean up the ingredients. Man oh man, this is a winner! I mean honestly – a chocolate pecan pie?! Delicious. This one is also dairy-free, soy-free, gluten-free and can be made grain-free! Makes 8 servings. Okay – if you eat pie like us then maybe 4-6 servings ha!

Recipe Notes:
- To make grain-free, replace gluten-free flour in filling with ¼ cup arrowroot starch. Also, use a grain-free pie crust recipe (like this one here!)
- To make vegan, replace the eggs with an egg replacer powder from Bob’s Red Mill – use as directed.
- I always use Enjoy Life Chocolate Chips while making desserts with chocolate chips because they are free from so many allergens. I trust their quality and commitment to allergy-friendly products.
- For gluten-free flour blend in this, I use Bob’s Red Mill GF All-Purpose 1:1 blend (the blue bag!). It works well for so many recipes and is easy to find!

- 1 pie crust (recipe below)
- 2 large eggs
- 1 cup coconut sugar
- 1 tsp vanilla
- 1/2 cup melted DF butter (or shortening)
- 1/2 cup gluten-free flour
- 1/2 tsp salt
- 1 cup Enjoy Life Chocolate Chips
- 1 cup chopped pecans
Gluten-Free Pie Crust
- 1 1/2 cups gluten-free all purpose flour
- 1 tsp honey (or sugar)
- 1/2 tsp salt
- 3 Tbsp ice water
- 2 Tbsp DF sour cream (or yogurt)
- 1 tsp apple cider vinegar
- 8 Tbsp cold DF butter (or palm shortening

Instructions
To make pie
- In a medium bowl, whisk together eggs, sugar, vanilla and butter until smooth. Stir in salt and flour. Fold in chocolate chips and pecans until combined. Pour filling in to prepared pie crust.
- Bake at 400F for about 45-55 minutes or until center is set and crust has started to brown. Let cool about an hour before serving to set.
To make pie crust
- In a large bowl, add dry ingredients. Cut in butter or shortening until pea size crumbles are created. Add in water, sour cream, vinegar and honey. Gently mix until just combined. Place dough on a floured sheet of parchment paper. Roll out into a large, thin circle. Flip the parchment paper onto a pie pan. Form edges as desired. If crust breaks or cracks, brush with a little water and form together with your hands.
