This is a perfectly tart yet sweet dessert recipe. The combination of lemon and orange go together wonderfully! I started to make just lemon bars but was short on lemons so I decided that oranges would work well in the recipe. There’s just a slight hint of orange as the majority of the flavor comes from the lemons. The bars are pretty chewy and dense which allows the glaze to set up nicely and also makes it easier to serve! This makes about 12 servings.
1 cup GF flour
¾ cup Stevia or sugar
½ tsp sea salt
¼ cup olive oil or melted butter
¼ cup applesauce
¼ cup orange juice
1 tsp orange zest
1 Tbsp lemon juice
1 tsp lemon zest
2 tsp lemon zest
1/3 cup lemon juice or orange juice
1 ½ cups powdered sugar
- In a mixing bowl, combine flour, sugar, salt, oil and applesauce and blend until mixture is crumbly.
- Add in eggs, lemon zest, orange zest, orange juice and lemon juice. Mix on medium speed until well combined. Pour mixture into a greased 8×8 baking pan.
- Bake at 350°F for about 20 minutes or until edges start to brown and center is set. Be careful not to over bake. Let bars cool for about 20 minutes.
- While bars are cooling, whisk glaze ingredients together in a small bowl until smooth. Pour glaze over bars and let set up for about 15 minutes. Cut into 12 squares and serve.
