Reese’s were one of my favorite candies as a child. I love the combination of chocolate and peanut butter. You don’t have to look at the labels to know that processed foods aren’t as healthy as homemade. This version is a perfect summer treat for your family. Not only is it all natural, but low in sugar thanks to the sweetness of the bananas. I’ll also let you in on a little secret – I have found an AWESOME Paleo chocolate company – Eating Evolved. They specialize in natural chocolate bars and coconut cups. Check them out here! Throw some in the freezer for your next summertime candy craving! Makes 4 servings
1 large bar of dark chocolate (I used Eating Evolved’s 72% Dark)
1 tsp coconut oil
1 large banana, frozen
1 Tbsp natural peanut butter (or almond, etc)
-
In a small blender (or my favorite- YoNanas maker), blend banana and peanut butter until smooth. In a small glass bowl, break chocolate bar into pieces and add coconut oil.
-
Cook in microwave for about 30 seconds. If mixture is not melted, cook for an additional 10 seconds. Stir melted chocolate and oil until combined.
-
Pour about 1 tsp chocolate into silicon muffin molds. Carefully swirl chocolate up the sides of the mold. Place molds in freezer for about 10 minutes.
-
Remove from freezer and gently spoon in banana mixture into each mold.
-
Top with remaining chocolate and return to freezer for about 20 minutes.
-
Carefully pop out the chocolate cups from the molds and serve!
