Fresh Sugar Snap Pea Salad with Onion Dressing

Yet another recipe featuring items from the Farmer’s Market! This one features one of my hubby’s favorites – sugar snap peas! This recipe is very simple as it takes some fresh, crisp peas and tops them with a tasty onion dressing. Perfect side dish for a BBQ! Makes about 6 servings

2 cups sugar snap peas, trimmed and cut into pieces

1/4 cup chopped onion

1 Tbsp white wine vinegar

1 tsp honey

1/2 tsp minced garlic

1 Tbsp olive oil

1/2 tsp black pepper

1/4 tsp poppy seeds

1/2 tsp sea salt

1/2 tsp thyme


In a small blender, combine onion, vinegar, honey, oil, pepper, garlic, poppy seeds, salt and thyme. Pulse until smooth and onions are blended. Pour dressing over peas and refrigerate for about 30 minutes before serving.
