Flavors of Fall Parfait

This is such a simple, yet elegant dish that makes a wonderful fall breakfast or a light dessert. Layer it in pretty dish and it’s fancy enough to serve to guests! It takes some traditional fall flavors and puts it all together. It is a great blend of pumpkin, apple and maple! I hope you love it as much as we do! Makes 4 servings

1 can pumpkin puree
1 tsp coconut oil, melted
1 Tbsp maple syrup, optional (or other sweetener)
1 tsp cinnamon
2 apples, peeled, cored and diced
1 cup grain-free granola (This recipe is great)
In a small blender, such as a Magic Bullet, combine pumpkin, oil, syrup and cinnamon and blend until smooth. In a serving dish, place apple pieces, top with pumpkin and sprinkle with granola. Top with additional cinnamon if desired.
