Fish Tacos

Happy Memorial Day!! One of those bittersweet holidays. I love the day off but not at the expense of those lives lost to keep us safe. God Bless all the military and their families today and always! A huge thanks to my favorite soldier – Gramps!

I hope you all are enjoying the long weekend – I know we are! We have family here from Arizona for the week and are loving every minute of it! Enjoy the rest of today and stay safe! Here’s an easy little dinner to throw together for your gatherings!

Don’t think of these as like you are replacing ground beef with fish and trying to eat it. These are much more tropical – if that makes sense. They are perfect for a quick and light dinner or lunch. We love them with the mango salsa but regular salsa tastes great also!

2 tilapia filets (or similar fish)
1 Tbsp olive oil
½ tsp ground ginger
½ tsp garlic salt
½ tsp paprika
¼ tsp black pepper
Package of coleslaw mix – or homemade (no dressing)
Tortilla shells or taco shells (we use GF corn)
Salsa – you have to try it with my Mango Salsa!

  • Season fish filets with ginger, garlic salt, paprika and pepper. Saute fish in olive oil or grill until cooked through.
  • Cook taco/tortilla shells if desired. We usually have soft corn tacos but throw them in the oven for a little extra crunch.
  • Layer taco shells with fish, coleslaw mix and top with mango salsa. That’s it!
