Fall Hashbrowns

Fall is my FAVORITE time of year!! I’m sure I’ve said this before but the fall flavors are the best! I love the earthy, root vegetables and the sweet apples, cinnamon, pumpkin, etc. I also love breakfast and combining the two! This is an EASY breakfast hash recipe that features apples, savory sausage, carrots and sweet potatoes. It’s perfect alongside your favorite egg dish or by itself! It is also very hearty and filling to keep you going on a busy day. As far as diets go, it is Paleo-friendly (if you allow potatoes), gluten-free, all-natural, etc. Makes 4 servings

2 large sweet potatoes, diced
1 large carrot, diced
1 large apple, peeled, cored and diced
1/2 lb sausage, crumbled (Try it with this Sage Chicken Sausage)
1 Tbsp coconut oil
1 tsp sea salt
1 tsp cinnamon
1/2 tsp black pepper
1/2 tsp sage
1/4 tsp apple pie spice (or a combination of cloves, nutmeg and allspice)

In a large skillet, saute potatoes, carrots, apple and sausage in olive oil. Sprinkle over sea salt, pepper, cinnamon, sage and apple pie spice. Stir until combined. Cook over medium heat for about 15 minutes or until sausage is cooked through and vegetables are soft.
