So I know strawberries are great with pound cake, angel food cake, lots of cake. However – I’m here to tell you that you don’t NEED cake. This recipe is so simple, but so tasty and will satisfy that sweet tooth quick – plus you won’t have to feel guilty about it! Makes 1 serving
In a bowl/parfait dish/cup/whatever, layer ingredients. Grab a spoon and enjoy!
*To make coconut whipped cream: take one can of coconut milk (I love this Native Forest Organic Coconut Milk). Carefully open the can without shaking it. Scoop out the coconut cream at the top of the can. Place cream in a blender or Magic Bullet with 1 tsp honey and 1/2 tsp vanilla. Blend for about 45 seconds until whipped. This works best if your canned coconut milk has been refrigerated for a few hours but it’s not required.*
