Okay, this may be the easiest recipe I’ve ever posted. It is a quick fix, simple, kid friendly meal that is definitely not an original. Anyone could probably think of this and make something similar. I literally could not think of anything for dinner last night. I was tired, busy and not very hungry. The kids, of course, wanted pizza. I didn’t have everything I need to make pizza crust. I was getting ready to give them the bad news and I saw some frozen English muffins in the freezer. There was my answer – praise God that those muffins showed up at the front, or else I would have still been hearing the whines and cries from sad children about not having pizza! Sometimes you just need a quick throw-together-meal. Add a side of steamed veggies and call it a night! Makes 4 servings
4 English muffins, tortillas, or other small item that can quickly resemble a pizza crust
1/4 cup pizza sauce, tomato sauce, etc
4 slices of cheese (we used provolone, but shredded would work also)
1 tsp Italian seasonings (basil, oregano, thyme, etc)
- If muffins are frozen, quickly heat them in the toaster. If not, follow the rest of these steps. Spread pizza sauce onto muffins and top with cheese. Sprinkle with a little seasonings. Bake/Broil at 475F for about 10 minutes or until cheese is melted.
