This is a super easy recipe but loaded with flavor! It’s quick enough for your lunch break or nice enough to serve at dinner. The plantain chips are a great substitution for tortilla chips for those on a Paleo diet or grain-free diet.
Shredded chicken
Chili powder
Garlic salt
Mixed greens (I like romaine, arugula, kale)
Tomatoes, diced
Avocado, diced

On a serving dish, place mixed greens. Top with shredded chicken. Sprinkle chili powder and garlic salt over chicken (use as much as desired).

Top with your favorite toppings; tomatoes, avocado, jalapenos, sour cream, etc. Lastly, top or serve with plantain chips.
