CRANBERRY VANILLA DONUTS
I know cranberry is typically a winter/holiday type food (and trust me, this would be perfect for Christmas morning) BUT I love it all year. These would be a great addition to your Easter brunch as well since the berries give a fruity, tart flavor that is perfect for Spring. The base would be good for any type of donut but this Cranberry Glaze is wonderful with it! This makes 6 baked donuts.
3/4 cup white rice flour
½ cup sweet sorghum flour
½ cup tapioca starch
½ tsp baking powder
1/3 cup stevia, sugar or honey
1 tsp xanthan gum
¼ tsp sea salt
1 tsp vanilla
½ cup applesauce
1 egg
¾ cup almond milk
Glaze
¼ cup cranberries
1 Tbsp almond milk
1-2 cup powdered sugar
- In a large mixing bowl, combine flours, starch, baking powder, xanthan gum, sugar and salt.
- Add in applesauce, egg, vanilla and milk. Blend over medium speed for about 30 seconds or until batter is smooth.
- Spoon batter into greased donut pan and bake at 350°F for about 15 minutes or until donuts start to brown and are cooked through.
- In a small blender (I used my Magic Bullet), blend together glaze ingredients until smooth, adding more sugar to get desired consistency.
- Pour glaze into a bowl and dip donuts into glaze to coat them.
