Each year, we bake some mini bread loaves to give as gifts for neighbors or loved ones. This year, I went a little crazy buying some cranberries and had an abundance of applesauce from my Christmas Spirit Ornaments. Therefore I HAD to use these two ingredients. I wanted to create just a simple, quick yet slightly sweet bread. This does the trick. There is also no yeast needed! Just a simple recipe for a delicious bread. This bread would make a wonderful bread pudding or even French toast. Makes 1 regular or 4 mini loaves.
2 1/2 cup gluten free flour
2 Tbsp baking powder
1/2 tsp sea salt
1/2 cup brown or coconut sugar
1 mashed banana (about 1/2 cup – or increase sugar by 1/2 cup)
1 cup applesauce
2/3 cup almond milk
1 tsp vanilla
1 Tbsp cinnamon
1/2 cup cranberry sauce *see note below*
In a mixing bowl, combine flour, baking powder, salt and sugar. Add in banana, applesauce, milk, vanilla and cinnamon. Blend just until combined. Carefully fold in cranberries. Pour into greased loaf/mini pans. Bake at 350F for 40 -50 minutes for regular loaf or 25-30 minutes for mini loaves. Let cool completely before slicing. Store in fridge for a couple days or freezer for 3 months.
*To make cranberry sauce: add 1 cup cranberries, 1/4 cup water and 1 tsp honey in a saucepan. Bring to boil and simmer for about 10 minutes or until cranberries have popped and water is absorbed.
