Cowboy Sloppy Joes

My mom always made baked beans with such a wide variety of ingredients that went together perfectly. This is my version of that – only in sloppy joe form. It features a slightly sweet sauce, crispy bacon and loaded with onions and peppers. You can serve this as a sandwich or top a baked potato with it. Either way, it’s delicious! Makes about 4 servings

1 lb lean ground beef, turkey, bison or even venison
1 large onion, diced
1 bell pepper, diced
1 garlic clove, minced
1 Tbsp olive oil
4 strips of bacon, cooked and crumbled
4 Tbsp tomato paste
1 tbsp molasses
1 Tbsp honey
2-4 Tbsp water or broth
½ tsp chili powder
¼ tsp chipotle powder
½ tsp black pepper
½ tsp sea salt
1 jalapeno, minced
Hamburger buns or baked potatoes for serving


In a large skillet, heat oil and add ground meat, onion, pepper and garlic. Cook for about 10-15 minutes or until cooked through. Add in bacon crumbles, tomato paste, molasses, honey, water and seasonings. Stir until well combined and cook an additional 5 minutes to let sauce thicken a bit. Add in jalapeno or other desired toppings.
