If you are the type of person that really only likes the ooey, gooey, middle part of a pan of brownies then these are your dessert! If you aren’t that person, I think you’ll still love these. In addition, you don’t have to turn the oven on for these so they are perfect for summertime! They are all natural, paleo, gluten, dairy, soy, egg, grain free. Basically, you combine a few common ingredients and you have a quick, tasty, guiltfree dessert! Enjoy! Makes about 12 servings
2 cups raw nuts (I used cashews, almonds and hazelnuts)
1 1/2 cup pitted dates
1 tsp vanilla
1/4 cup canned coconut milk
1 Tbsp coconut oil
1/4 cup cocoa powder
1/2 cup peanut butter
1/2 cup coconut flakes
2 Tbsp coconut sugar
- In a blender, combine nuts, dates, vanilla, milk, oil and peanut butter. Blend until smooth, scraping down sides when necessary.
- Once completely blended, pour into a greased 9×9 baking dish.
- In a small blender, pulse together coconut flakes and sugar until well combined. Sprinkle over brownie mixture.
- Refrigerate prior to serving if desired. Store any leftovers, covered in the fridge.
