Cilantro Lime Chicken with Avocado

Don’t be fooled by the picture; this dish my look fancy but it is really easy to make. We are to the point now where we don’t even eat real rice, just cauliflower rice. Trust me, I NEVER thought I would say that! I love that it doesn’t make us feel heavy or too full after a meal. You can eat TONS of it without adding all the carbs and calories that whole grain rice has in it. Plus it is very versatile and easily takes on different flavors. Add some delicious grilled chicken and fresh avocado to finish off the dish! Makes 4 servings

1 small head of cauliflower, riced
1 lime, zested and juiced
1 Tbsp fresh cilantro, chopped
1 tsp chili powder
1 tsp garlic salt
1/2 tsp black pepper
4 chicken breasts
1 avocado, diced

  • In a large bowl, combine chicken breasts, chili powder, garlic salt, black pepper, half of the cilantro and half of the lime juice. Toss chicken in mixture until coated with spices.
  • Grill over high heat for about 15-20 minutes, turning halfway through.
  • While chicken is cooking, place cauliflower in a saucepan and cover with water. Bring to a boil and cook for about 7 minutes. Remove from heat strain out all of the water. Return to pan and add remaining lime juice, zest and cilantro.
  • Place cauliflower rice on plates, top with sliced chicken and diced
