Okay… I know this sounds a little odd but trust me. I would never share something with you that wasn’t delicious… or at least something I didn’t think was delicious! AND I know it’s fall but I NEEDED ice cream last night. I had an EGD yesterday and my throat was a little sore – not bad though, major props to Dr. D! Anyway, I wanted a Root Beer Float (like this one!) but I was out of Live Soda Kombucha Root Beer… but I had their Pure Doctor (like Dr. Pepper). I could have made my plain vanilla coconut milk ice cream BUT little man suggested chocolate. And let’s face it, once chocolate is in my head, I have to have it. Hence – this creation. I topped it with one of my new FAVORITE products – Eating Evolved Chocolate Spread. Eating Evolved has always been one of my favorite brands of chocolate – they use pure, natural ingredients that taste great. When I saw they released a new product, I had to get it quick. Check them out here! Now for the recipe: makes about 4 large servings
2 cups coconut milk (or 1 can Native Forest full-fat)
1 cup almond milk
1 cup coconut water
1 tsp vanilla
1/2 cup coconut sugar
1/4 cup cacao powder
1/2 tsp sea salt
1 bottle Live Soda Pure Doctor Kombucha (or root beer, Dr. Pepper, etc)
1/4 cup Eating Evolved Original Chocolate Spread, meltedĀ (optional but totally delicious)
- In a large mixing bowl, combine coconut milk, almond milk, coconut water, vanilla, sugar, cacao powder and salt. Blend using whisk attachment for about 2 minutes or until smooth.
- Pour mixture into ice cream maker – I use this one and it’s great. Prepare according to maker instructions.
- Scoop cold ice cream into a glass. Pour over some kombucha soda. Top with about 1 Tbsp of chocolate spread.
- Grab a straw, spoon or just slurp it up!
This sounds yummy and I will have to make it for my family as we was able to sample these items this weekend at the GF & AF Festival and plan on purchasing it for our home.
