Chocolate Cream Cupcakes

Last week, I shared one of our new favorite recipes – Paleo N’Oatmeal Cream Pies. This week, I’m pleased to share with you another Paleo treat. This time it resembles those delish Hostess Cupcakes/Ding Dongs. What I love about this recipe is that it uses a great mix to save some time! I love Simple Mills baking mixes. They are quality mixes with natural, paleo friendly ingredients. Most of all, they actually taste GREAT! This cupcake uses the Chocolate Muffin Mix – found here. You could also use another one of your favorite chocolate cake or muffin mixes/recipes. The filling is an all natural, coconut cream filling. Then the cupcakes are topped with a simple dark chocolate frosting. Makes about 9 cupcakes

Chocolate Cream Cupcakes

1 pkg Simple Mills Chocolate Muffin Mix
1 egg (or flax egg – 1 Tbsp flax + 3 Tbsp water)
1/2 cup water
1 Tbsp coconut oil, melted
Filling
1 can coconut milk
1 tsp raw honey
1/2 tsp vanilla extract
Frosting * see note below*
2 Tbsp coconut oil, melted
1/4 cup cacao powder
1 Tbsp raw honey

  • In a mixing bowl, combine ingredients for cupcakes until smooth. Pour batter into greased or lined cupcake pans, about 2/3 full. Bake according to package instructions. Let cupcakes cool completely on a wire rack.
  • Meanwhile, open coconut milk and remove thick cream. Place cream in a mixing bowl. Save the coconut liquid for a smoothie or other use. Add in raw honey and vanilla to coconut cream. Using whisk attachment, blend over med-high speed for about 2 minutes or until smooth and whipped.
  • Scoop out the centers of the cooled cupcakes, taking care not to scoop through the bottom of the cupcake. Pipe or spoon whipped coconut cream into the centers of cupcakes. Place in the fridge for about 15 minutes.
  • While cupcakes are in the fridge, combine frosting ingredients and stir vigorously until smooth. Remove cupcakes from fridge and spoon coconut frosting over the top. Place back in fridge for about 15 minutes to let the frosting set. If you have any whipped cream left over, you can make little designs on the top of the cupcakes.

 

*In place of this frosting recipe, you can simply melt about 1 cup of your favorite chocolate chips.021015
