These are a great, healthy meal option. The cucumber makes a light and crisp bread or cracker alternative and goes perfect with the cool chicken salad mixture. It makes a great lunch, snack or even an appetizer.
1 cucumber, peeled and cut into 1/4″ slices
1 cup shredded chicken
1/4 cup mayonnaise (I like a vegan, soy free blend)
1/4 cup grapes, chopped
1/2 tsp dill weed
1/4 tsp sea salt
1/4 tsp black pepper
In a mixing bowl, combine chicken, mayo, grapes, dill, salt and pepper. Scoop into spoonfuls and place on cucumber slices.
