Have you ever been to Chipotle? We have a few around our area and it’s a pretty good restaurant. What I like best is they use good meat and natural ingredients. Plus they will change their gloves and really watch the contaminations for those gluten intolerant. They have a corn salsa that is awesome! Anyway, they have these burrito bowls that are so good – filled with whatever you want. This is my grain free, homemade version (without the burrito). This makes four servings
1 head cauliflower, riced (see this recipe for Cilantro Lime Rice)
1 can beans, rinsed (we prefer black beans)
1 cup corn
½ cup carrots, diced
2 cups shredded chicken
1 tsp cilantro
1 tsp sea salt
½ tsp black pepper
½ cup shredded cheese
1 avocado, diced

In a skillet, sauté carrots, corn and beans in olive oil. Add in cilantro, sea salt and pepper. Cook for about 10 minutes or until carrots are soft.

In a serving bowl, add in cauliflower rice, top with bean mixture, shredded chicken, cheese and avocado.

You can also add additional toppings such as salsa, tortilla chips, sour cream, etc.
